Lemon Rice

Navina Khanna, HEAL’s Executive Director, shares her go-to recipe for Lemon Rice!

The golden radiance of turmeric has stained too many wooden spatulas, cutting boards, and countertops for me to count. It’s home to me – a core component of most meals growing up and one of the five spices in my masala dabba. I love it as much for its earthiness and vibrant color as I do its anti-inflammatory and antiseptic properties.

This recipe brings together the brightness of lemon and turmeric for a dish commonly found in train stations in south India. There, it’s wrapped in newspaper or banana leaves, served alone or with yogurt-soaked dried chiles. At home, eat it by itself, with yogurt and pickle, or serve alongside your favorite veggies, dal, meat, or curries.

*Turmeric or Curcuma longa is a rhizomatous native to the Indian subcontinent and Southeast Asia. Known for its antiinflammatory and antioxidant properties, now widely grown and cultivated, it has been traditionally used in food, dyeing textiles, and medicine.
